If you haven’t used Linux before, I would suggest something easy like Ubuntu, Mint or _maybe_ Fedora (even though I think it’s a handful for beginners). Persistent Storage is there to save your changes as the image itself on a USB is read-only. So depending on how much you want to save data I would say make it as big as you possibly can.
