what it can do by itself?

I think *that* may indicate your problem.  It's probably really going
to depend on your TOSLINK hardware if it uses some special custom ICs
to drive the port.  If it's just basic hardware to modulate the light,
then it could be completely dependent on what your software can do.

Tangentially...  I have an outboard multi-channel USB sound device, a
Behringer U-Phoria UMC1820 (*).  There's no special drivers, Linux
always presumes it's a surround sound device (**) rather than some
generic multichannel thing, and gives me no other configuration
choices.

* Multi-channel input, multi-channel output, analogue and digital.

** Front left, front center, front right
   Side left, side right
   Rear left, LFE, rear right.

Most sources just play left and right stereo audio, but given an
application that can play surround sound, it's potentially 8-channel
audio.
