Reply-To exists for a reason. The header is necessary when someone is writing an e-mail on behalf of someone else, so that the reply should go to that someone else. E.g. a secretary sends a memo (requested by the boss), whose reply should go to the secretary's boss. If you don't think it's a good idea to use Reply To, then don't click that option. If you remove it from your RC installation, that's good for you, but you are bound to annoy some user who suddenly has a legitimate need to generate that header.
