I probably need to install the java-8 version manually, but have to find
out how to do that

choose the java 8 line then check that Java 8 is correctly set :
$ java -version
should yield something like:
openjdk version "1.8.0_352"
OpenJDK Runtime Environment (build 1.8.0_352-8u352-ga-1~20.04-b08)
OpenJDK 64-Bit Server VM (build 25.352-b08, mixed mode)
Then try again to start Scilab.
