Frederico, First: How did you install Scilab in Linux Mint 21.2? Version 6.1.1 with Software Manager or from the terminal (both from the repositories) or version 2023.1.0 from the Scilab download page? I can then send a working desktop file to you.
Second: It is all about graphic drivers.
