This is described in the last paragraph of the docs for the xdoc plugin (see http://maven.apache.org/reference/plugins/xdoc/). Regarding the particulars of the styles themselves, I have not found any documents. I had to dig around the generated html to find out how the styles are applied and where the styles reside. If you run the site goal, you will find a target/docs/style directory that contains the various css files. The maven-base.css and maven-theme.css are automatically included in each of the generated html files. If you supply a project.css, it will be copied to the this directory as well, and will also be included in every html file.
