I was trying this earlier last week... Here's the issues I have hit:
1. It seems that the servlet bridge does not (obviously) work with Jetty 8 2. Most of the deps are not in central If you can live with Jetty 6, it's quite easy though... you just abandon half the maven machinary, expand the infocenter webapp into src/main/webapp and then use the maven dependency plugin's copy-dependencies to copy the jar with the help content into place.
