Maven is simply the build tool for this Orekit thing. No one on this list has any specific expertise with Orekit, it seems. Realistically you need to find an Orekit Users list (or a developers list) and talk to them about how you might be able to customize the output etc. Then use Maven to build the results after you've made your modifications to their code.
