If I'm not mistaken, the Windows eclipse.exe executable is just one way to start Eclipse. Obviously, users on Mac and Linux are able to use Eclipse without using it.
Try java -jar startup.jar in the Eclipse directory. Then pass whatever command line arguments you want to it.
