If you're using M2Eclipse, you can easily create a new project in Eclipse that already has the correct Maven structure. Select File->New->"Project..." then Maven Project from the list. Spring is really just one of the components that you use in your project. It really doesn't affect anything about how the project is created.

There is probably no single correct way to do any of this. If you need some help getting started, look here...

I would suggest you start with something much simpler for your first project. It might not take care of your immediate needs, but it's the best way to learn. You're diving in way over your head trying to tackle Maven along with all of those EAR and WAR files.
