there are examples and what happens during release:prepare and

Can someone explain the behaviour of this goal? In what scenarios are you
using it, if at all?

If you get half way through release:prepare, and something breaks for some reason, and you want to abandon the attempt at release to fix it, you need to restore the various poms to their original state, and that in itself can be painful and error prone.

release:rollback allows you to reinstate the original pom files and version numbers so you can try again.
