We have been using Apache office on our MAC laptop for some time now. m

The program name is Apache OpenOffice (OpenOffice.app in your application 
folder).
  It will no longer open from the icon, but we can find our documents through finder.  
However we can not open Apache to write a document.  It is giving us a message that says 
"the last time you opened.office.org it unexpectedly quit while reopening Windows.  
Do you want to try to reopen its windows again?"
We say "don"t reopen" since we have not used windows on our MacBook Pro.

Jeez!!! You should learn computer terms. Windows refers to the document window, not Microsoft Windows.

We do not want to chance deleting and reinstalling because we could lose our 
existing documents.  What do you suggest?

Document are stored separately from the program. Deleting a program does not delete the documents it created.

Cause and solution to your problem below:

   You need to delete the folder "org.openoffice.script.savedState". It is in the 
"Saved
   Application State" folder in your User/Library.

After deleting the folder you should upgrade to the latest version of Apache OpenOffice, 4.1.1. The bug that caused your problem has been fixed.
