have quite a bit spelling dictionaries installed and want to select only
the ones that are selected.

The distinction here is not for a language other than that selected as
"Default language for documents" but any language other than that set
for the current text. Note that language is a character property, a
character style property, and a paragraph style property (but not a
paragraph property, although an entire paragraph can be given a
language setting using the character property, of course). The default
language applies only in the absence of any of these settings.
So, when in that specific document, I go to Check Spelling, a
combobox with the available languages is accessible.
I think this interface offers only languages for which you have
spelling dictionaries installed. There is no facility here to select a
language for which you have no dictionary or to set the language to
"[None]" so as to disable checking.
Result: I cannot change the language of a complete document or a
specific part of the text in it.
To change language, select one of:
o Go to Format | Character... | Font | Language (or right-click |
Character... | Font | Language). Better still, create and use a
character style for the relevant language.
o Go to right-click | Edit Paragraph Style... | Font | Language.
o Go to Tools | Language > | For Selection >, or ... | For Paragraph
>, or ... | For all Text >.
This works OK in the MS-Office environment ...
I don't know how much of language setting transfers between products;
this may well depend on the file interchange format selected.
