I think there are two issues you have here:

1. Spellchecking your document OOo: make sure the dictionary you have
Tools->Spellcheck->Check and then the language is the same language as
the document text you want checked (select a paragraph, right
click->Character then look for the language under font). Fool around
with these settings.

2. You want your email client to have spellcheck. I think you are using
Outlook Express (correct me if I'm wrong) and it doesn't have spellcheck
included (dumb isn't it?) unless you install MSOffice. OOo can't provide
the spell check at this time (illegal, etc. from MS). If you really want
spell check for email, I suggest you try Thunderbird
(http://www.mozilla.org/products/thunderbird/ ) which comes with spell
check, spam filtering, and has less security holes, etc. It will
completely import all your settings and mail from OE.
