i remember a while back, when someone was asking about recovering a file they have incidentally deleted throught the Open dialog. usually, when you delete a file in the Explorer (on Win) or another file browser, you send the file to Trash. the person was asking where this file was sent to, since she/he couldn't find it anywhere on the computer. maybe that's the reason they removed this option from the Open dialog.
you should try searching IssueZilla, in case someone entered an Issue for it. you should find the explanation there.

Newer versions (1.1.3, 1.1.4) do not seem to have that option. The only option is "Show hidden files". I also checked the 2.0 beta and it also is missing the option to delete and rename files.
Is there a reason why delete and rename were removed? Also, is there any plan to eventually add them back in once there is better integration with Gnome Nautilus?
