where exactly do you wish to show/hide the levels?
if you are talking about outline numbering for headings, use Tools - Outline numbering. if you're just talking about lists, use Format - Bullets and numbering. select individual levels and define the bullet/numbering/nothing you wish to apply to this level.

Like that. Same as in Word, pretty much. Right click in your list and select Bullets and Numbering and modify the settings.
Like that but MSWord can hide or show certain levels like only showing:
a b c
