There is no direct way of doing that. This IMHO cries out for an RFE; I'll have to check to see if one has been filed. There is, however, a workaround.
Short answer: use text frames.
Long answer: Start with a blank document with the margins set as you want them.
Insert -> Frame
Set the width to match your horizontal margins. Leave "Autosize" checked. Then, under the Position section, set it to center both horizontally and vertically with respect to the page text area.
When you click Ok, you will have a text box that is as wide as your margins, but really short vertically. As you type in that frame, it will expand vertically to accomodate your text and will remain centered on the page.
Frames are very useful for stuff like this and you can use paragraph styles and everything else inside of one. Basically, anything you can put on a regular page you can put inside a frame -- even other frames.
The only time this method could get dicey would be if the text length exceeded a page. If need be you can put another frame on the second page just like the first and link them so the text will run from one to the other, like a newspaper.
