Let me answer your question with another question: "what EXACTLY can one do with Microsoft Office?"
Obviously, the answer to that can fill a book :-) The same is with OpenOffice.org. In short, OOo has a word processor (called "writer") a spreadsheet (called "Calc"), a presentation application (called "Impress") and a drawing program (called "Draw"). You can do with them whatever you usually do with such applications- write documents, do calculations and data analysis, create presentations, draw diagrams and much more.
