Go to: Tools > Message Filters...
Click on New... and name the filter Out Of Office Junk or something like that.
In the section called "For incoming messages that:" select: Subject containts "Out Of Office"
In the section called "Perform these actions:" set "Set Junk Status to:" Junk (make sure the checkbox is checked) and click ok.
Now all messages containing "Out Of Office" in the subject will be marked as junk.

No. Some of our users do not know how to setup vacation or whatever
autoresponder they use to ignore mailing lists. Hence the odd one gets
through. On your end, your virus scanner should work filtering out the crap that
is flooding the Internet.
