Shift-click on the object you want to remove from the selection. Works in Writer and Draw, at least.

Depends on the module being used. If it is writer this is a little
difficult but can be achieved using draw fairly easy. Use the mouse to
encompass the objects that are to be selected. I can't seem to find a
comparison to the MS office function of ctrl to select and de-select.
Maybe someone else on the list can.
