The "some shift or control key combination" is Alt+Shift. As you suggest, you can toggle back the same way. You can also select individual languages directly using Ctrl+Shift+1, Ctrl+Shift+2, etc. And if you prefer, you can disable these keyboard shortcuts at Control Panel | Regional and Language Options | Languages | Text services and input languages | Details... | Preferences | Key Settings... .
