Word count changes from v1.1.x to v2.0. In 1.1.x go to *File > Properties > Statistics* for the total words count in the document.
In the 2.0 betas, go to *Tools > Word Count* and it will tell you the total words, and if you have text selected, it will tell you the count of that selection.
Grammar checkers are not part of OOo, but people say one is in the works. Here a copy of Jonathon Blake said in the discuss form on 28 May 05.
