Ctrl+Tab inserts a tab within the table cell in Writer.
Most manual formatting of table contents is done exactly the same as for
any other text in Writer, which is probably why you can't find something
more specific in the Help. Select what you want to format, and use the
Formatting toolbar or the right-click menu. Does that not work for you?
