Indeed, there is an "English English". You may want to check the
Language Options under :
Tools --> Options --> Languages and under "Default Language for
Documents", set the language to "English (UK)".
This should set the language for ALL your documents. On the other
hand, should you want to change the document for just ONE specific
document, perhaps you may want to look at the settings on a per Style
basis.

Two things to add to Pradeeps'answer
If you look at the bottom part of the writer screen you will find
which version of English (yes there are many available in OOo) you are
using. If it shows English (UK) then you are using British English.
If you want certain words added to your dictionary then when you spell
check them choose to add them to your dictionary. You may choose to set
up your own personal dictionary (mine is called Rob) or add it to the
dictionary you use.
