Thanks for your words of wisdom.  You set me on the right track.
My problem was I didn't RTFM accurately. I did indeed miss the "-net" option. I uninstalled, then did it right, and saw exactly what your pdf manual said I should.

If I may be so bold as to make a suggestion...
In your .pdf manual, on page 35, a brief note that the user should NOT just "click on" the setup.exe for a multi-user installation, but instead he MUST type it in so that the -net option can be specified, would be helpful.

3. The OpenOffice stuff already appears on JIM's programs, and I can
start a couple applications. GOOD!

4. Switch to user CATHY, and when I run the setup in item 2 above, I
get a dialogue box immediately that gives me three choices:
      Modify,  Repair,  Remove.
   This is NOT the box that is described in the manual.  And the
subsequent dialogue boxes look very much like the SERVER installation
dialogues.
THAT is the part that has me halting.  (I'm a bit of a novice;
recently A+ certified and just assembled this computer, but don't
have the opportunity at the moment to blow my system software up and
start over. Otherwise I'd just run the experiment and
devil-may_care!!)

SO the question is am I seeing what I SHOULD be seeing, and I should
continue?

   The answer begins on page 35 of setup_guide.pdf which come with
the downloaded zip file.
   Using the multi-user install is what you want. What this does
is places most of the files (about 270 MB) in a single folder. Then
the second step in the install process places the personal user
files (about 2 MB) in a folder in his section of the hard drive.
   What is confusing you is that all of this can be done on a
single computer (which is what you want) or it can be done on a
network. Follow the instructions beginning on page 35 of
setup_guide.pdf to install the server section. THIS MUST BE DONE AS
System Administrator. After that is completed, begin installing the
workstation part. The directions begin on page 47. One very
important point: each user must install the workstation part in
order to be able to use OOo. If there are three different log-in
users, you do this part seperate times: log in as one user to
install the workstation, log out and then log in as another user to
install it for him or her, etc.
