I have had issues with charts in MS Word in the past, between different versions. It may be the same problem. What I ended up doing was saving the charts as images and then inserting the images.

Note, my issues were all Word related and not OOo related. Different versions of MS Word for Mac and Windows.

Are you sure that you didn't paste links to the charts over actual copies of the charts? Just a thought.
