After starting the next paragraph, go back and select the list items *only* and apply a style that has the amount of space you want between list items (as opposed to the amount of space you want between other paragraphs). This can be a modification of the style you used for the rest of the piece you are writing. Then, if you need to add another item to the list (or add an item in the middle), it will pick up the spacing for the list items instead of your standard for other paragraph breaks.
