I know that can't be true, but I don't find the way to wipe all tab stops; the "Delete All" button seems to apply only to "custom" tabs stops that were /added/ to the style.

What am I missing?

Each level of a list has its own indentation value, and as you change levels in the list (with tabs or by using the Increase Indent and Decrease Indent icons in the Formatting toolbar) the appropriate indentation is supplied automatically. In your case, you don't need to specify a list at all; the list really only matters if you want bullets/numbers, or if you want text to flow based on the list level when you reach the end of a line. What may have been confusing about using the first column of a table for your list is that inside a table cell, you use Ctrl-Tab, not just Tab. Sorry I didn't mention that before -- I use the indention icons rather than tabs, so I didn't think of it.

If you were using Format > Bullets and Numbering for your list, as is typical, you would not be specifying any paragraph styles at all, but you would be able to control the appearance of the list with the various tabs of that dialog.
