Thanks for your comments Franz.  I tried opening the same spreadsheet in OO 2.4
on a linux box and it works fine, so I don't think that is it in this case.

Indeed. The changes in Calc formulas are not that big, that basic formulas as SUM(F4:F6) behave different.

Is there someone else out with OO3.0.0 on a Mac, so that we can try to reproduce?
