Generally you are referring to a good email program's ability to remove 
anything below the signature automatically upon replying to a message.  
Anything below the typical two dashes would be eliminated.  However, that's 
only upon reply, not delivery.  In all my years administering email I never 
ran across an email package that deleted them upon delivery, however, since 
I've stopped one may exist.
