I want to have a sort of breadcrumb thing in the header for each page.
Do I need to have a separate page style for each page?

Not sure what you mean by that, could you explain? Most likely, this could be accomplished in a single page style by inserting an appropriate field, either predefined or custom. You might check the documentation at wiki.services.openoffice.org/wiki/Documentation/OOo3_User_Guides/Writer_Guide/Working_with_Fields
to see if that helps.
I have level 1 and level 2 headings and I want the header to have the last visible level 1 heading in the header (maybe the first level 2 header also).

Thanks, I'll check the wiki and see if I can figure it out.
I did what I want.
I set a variable called 'breadcrumb' that I display in the header nd set it wherever I want it to change. I didn't see a way to base this on the current "heading 1' style (so I have to make sure to manually set the 'breadcrumb' variable) but it works. :-)
