I'm not familar with exactly what should be saved in doc book format
and what should not. I can say that I've just tried the same as
yourself and when exporting the .xml file back into OOo, no images
were displayed. There was also no images displayed when I viewed the
xml in mozilla.

If you think this is a bug, then submit an issue and the developers
will look at it.
