There's really no need to "change back" -- you can both read and write .doc files using OOo Writer, and you can decide whether you want to use Writer or Word as a default overall, or on a file-by-file basis. Both OOo and MS Office programs can coexist on the same computer.

If you want to use Writer, but save text documents as .doc files because you're sending them to people who can't or won't use the standard ODF formats, you can either use File > Save As and select .doc format or, if you always want to do this, change the default setting using Tools >Options, Load/Save, General, Document type Text document, Always save as Microsoft Word 97/2000/XP (the most widely supported of the MS Word types).

If you want to use Word for .doc files, and Writer for general use to get its advantages, you may need to ensure that the .doc files have a "file association" that specifies Word as the default.This can usually be done by right-clicking on the file, selecting Open With, browsing to the Word application, and selecting the option to always use this program for these files. You will want to make sure that the file association for .odt files stays with OOo; installing an upgrade of Word (and maybe basically any other MS application) may change it to use Word now that Office 2007 SP2 "supports" the ODF formats. (It sort of does, but in a way unlike every other application that uses ODF.)

If you really don't want OOo at all, you can uninstall it using your operating system's usual process, such as Add/Remove Programs. Before doing this, make sure that the OOo QuickStarter program is not running (it would have an icon with seagulls, in your system tray on the bottom right of your screen). If it's there, right-click on it and select Exit. After you have uninstalled OOo, you may need to set file associations as described above.
