That's all I want to do ... Change the Icon ... not the default program which opens the file.

That only changes the icon of one particular file. It's useful for certain purposes, but it won't do what is being requested.

The only way to achieve that would be to have a special alternate copy of the soffice.exe file (or swriter.exe file, on OOo 2.0) differing from the main one only in the icon, and having *.doc associate with that, instead of with the main version.

That's a fairly funky and fairly expensive solution to a fairly obscure requirement.
