Hi Stefan, I would think that the logic is that you do not require to change the color palette that many times in a word document, and even less in a spreadsheet. You can customise your color templates for all the modules within OOo by going to Tools -> Options -> General -> Colors. This will allow you to modify and/or load/save palettes for use with all applications within OOo.
