I am sure when I installed openoffice.org, I had to actually tell the
installer to associate openoffice.org with MS office, files, i.e by
default this association is turned off,

Have just download Open Office to trial. It appears that Open Office
has now become the default text/spreadsheet program, because when I
double click an excel or word file to open, they now open in Open
Office. How do I keep MS Office as the default program until such
time as I decide to switch to Open Office.
Thanks
Search for this file: setup_guide.pdf in the OpenOffice.org
installation directory. (OOo_1.1.4_WindowsIntel_install or an
approximation of this) Using Acrobat Reader to open setup_guide.pdf. On
page 27, there is an explanation on file associations. It will tell you
how to replace MS Office as your default program to open MS Office
files.
