Click once on the file to select it, then go under the file menu in the finder and select "open with" -- choose neo office from the list of applications (you may have to browse for it if it is not in your Applications folder) and check the box that says "always open with" -- this will make neo office the default application to open documents with that extension. You will have to repeat the process once for each type of document (text, spreadsheet etc.). I would also create a documents with .doc and .xls extensions and open those the same way -- that way if someone using a MS office product send you a document you will be able to open it by double clicking.
