IN the "Find and Replace" dialog there is an "advanced" button. Click on it and you will see Attribute and Format buttons. using these you should be able to do your find and replace. Note that if you use named styles this is much easier e.g. make a style called "clients name" and then for every "Mr Jones" simply select the text and apply the style. Later changing the style only occurs in one place. For more information have a look at the styles document in http://documentation.openoffice.org.
