QUESTION
How do I change my default Language / Dictionary after the Spell Checker
has already started parsing the document using the US Dictionary?

I routinely create documents in three different languages and
was having this same difficulty. This is how it was explained
to me:
To set a language for an entire document:
Click on Edit > Select All
this should highlight your entire document
then click on Format > Character
When the character dialog opens, click on the Font tab and
choose your language from the drop down box.
