Rather than install X on your mac, which I am guessing you would never use for anything other than Open Office, try NeoOffice from www.neooffice.org -- this is open office adapted to run on am mac without X11. It is a very simple install, and works very well. I think you will be pleasantly surprised.

though there are several X servers available for OS X, you are
probably looking for Apple's X11 implementation which can be found at
http://www.apple.com/downloads/macosx/apple/x11formacosx.html
The X server provides a multi-platform way for OOo to display its
windows. I'm not sure if a native Cocoa implementation is underway,
but from my experience the X11 version is running great.
After installing the X server, the OOo launcher should be able to find
it automagically and properly start the program.
