Just some silly questions here, each of which might explain your problem:

Are you able to create a document in WORD, add an image, save the document and
then reopen it in WORD on a different machine?

Can you reopen it with Word on the same machine?

Are Word and OpenOffice on different machines?

Where is the image stored? Is it a .jpg on the same machine in both cases?

Perhaps the image is on one machine with OpenOffice but not available to the
second machine running Word?

What is the image format?

Is the image embedded in the document, or linked to it?

Meantime, I'll see if I can duplicate the problem.
