I have thought about styles, but could not come up with a good way to do what I need to do with them.

What are you trying to do, that you don't think can be done using
character styles?

I need to change from one language to another so that the
spell check will use the proper dictionary for each language.
If it were restricted to paragraphs, I could use paragraph
styles, but I can't imagine having to assign character
styles to every character.

What seems to me to be the most efficient way would be if
there existed a way to choose one language and have it stay
in effect until such time as a different one were chosen.

Actually, that does work! I just go to Format > Character
and select a language. Whatever I type in is then associated
with that language until I change it. So if I had a macro
on my toolbar that set each language, it would be really
simple. Just click and type, click and type.
