My I suggest you read the "Introduction to Styles" chapter in the
User's Guide section of documentation.openoffice.org. The URL to the
web page you need is
http://documentation.openoffice.org/manuals/index.html.
Introduction to Styles is a chapter in the Writer's Guide section of
this web page.
Following its directions you can set up a Character Style for each
language you want to use. You can also dock the Stylus window (1.1.x
versions) or the Styles and Formation window (2.0 pre-release
versions). Then when you want to change languages, you simply double
click that language's character style. You can then begin typing in the
new language. There is much more that you can do with styles, but you
will have to read the chapter of styles to find out.
