Hi Steve
Within OOo Formula Editor (embedded or otherwise), go to the menu item
"Format - Fonts..." This should give you a list of the fonts used for
different types of expressions, which you can modify as you please using
the modify button to the right.

Finally you need to use the "Default" button on the right to save your
changes as the default for all new formulae.
