Assuming you have OOo2.x you can simply install the language pack you need and use that. If there is no language pack or you have 1.1.x, use the AutoPilot/Wizard to install the dictionaries et cetera for your language. Use Tools > Options > Language Settings to set the default language to yours and so on.
