Cool idea! I realize you already have your laminated documents now, but another way to have worked around this is to print on normal-weight paper, single-sided, and then laminate two sheets together back to back.
I agree that being able to sort the pages easily would be ideal. I suspect that the programmers hadn't thought of such a potential use of spreadsheets.
Another idea for a workaround is to have each page be a separate sheet (you may already have it set up this way, I don't know) in a workbook, and then you can reorder the sheets in the order you want them to print.
