When you installed OpenOffice, a screen asks you whether you wished to associate MS Word, MS Excel, and MS Powerpoint files with OpenOffice. Presumably you checked the boxes and the associations were set up as requested.

No file was "converted" in any way by the install or by this association. The only way in which an MS Office file can be "converted" is if someone overwrites it in an MS Office file format from within OpenOffice, and even in that case it should still openable from within the appropriate MS Office component.

You uninstall OpenOffice.org the normal way under Windows -- that is under the Windows Start menu, select "Control Panel", select "Add or Remove Program", select "OpenOffice org" and mouse-press on the "Remove" button. This is the standard uninstall for almost all software installed on a Windows operating system.

When it is uninstalled, the associations with MS Office files will be reset as before.

You can also change the associations back without uninstalling using the normal Windows procedure for your version of Windows.

For Windows 2000 and above, single-click on the icon for any such file, right-click, select "Open with...", select "Choose program...", checkmark the bottom statement "Always use the selected program to open this kind of file" and select the proper MS Word component. You can use this method at any time to change the default double-click association between a file type and a program using any file and any program.
