I have just tested my theory, though, and here's what works:
1) Create a frame, then open the Frame formatting dialog on it.

2) Set the frame anchor to Page, then set a minimum for the horizontal & vertical size, set both Horizontal Automatic and vertical AutoSize options, and set the alignment to Center horizontally and vertically. I chose "to Page Text Area"

Note: if you don't want the horizontal size to change, uncheck the Automatic option on the Frame dialog.

3) Begin filling the frame with text. After the text reaches the minimum width, the frame will expand horizontally until it reaches the margins, then begin to expand vertically, until it fills the page, not stopping at the margins. At this point it will be overflowed, and you will not see further entered text.

4) If you create another frame (on the next page, possibly) and link the two frames, the overflow text from the first frame will flow into the second frame, and the first frame's AutoSize property will be deactivated. Essentially, this will happen to all further linked frames in a chain, except the last frame in the chain.

Conclusion: Yes, you can do what you want with frames.

Followed the instructions, ended up with the text in a frame centred
vertically and horizontally on the page, just as expected.
