I'd look to sites that have made public announcements about deploying OOo.

A specific name that comes to mind is Paul Nelson in Portland, Oregon. He has been involved in some very large scale deployments of OOo that have been in place for some years already. I'd try looking him up, among others.

It make take a bit of leg work (ok, finger work) but you should find some contacts at the sites above that can provide what you are looking for. Some are in the UK.

Many others prefer to keep quiet to avoid trouble from the MS sales teams. No joke, the salesmen can be very difficult. But if you can find low key sites not on the list above, they may be willing to talk to you anyway if it does not draw attention.

The good news is that the results of your investigation, if written up, would be sought after material at many conferences around Europe.
