When I try to do the same, introducing keyboard manual breaks
[Crtl+Entr] and using the F11 page style small window, manually
specifying the page styles by positionning the cursor on a given page and double clicking on the page style of my choice I cannot do the same.

You are correct. That does not work. You must use either the
method given in the FAQ (Insert > Manual Break) or (if you prefer
to use the [Ctrl+Enter] technique to start a new page) there is
another way which you will probably find is more work:
Place the cursor in the first paragraph on the page after the
break, right-click and choose Paragraph. On the Text Flow tab,
under Breaks, select Insert, With Page Style, and choose the page
style from the list.
This method is useful for inserting a manual break after the text
has been written.
